I love going to restaurants that have garlic mashed potatoes….I’m what they call a Potatoaholic So when I set out to find a recipe to closely match what I love, I decided it had to be easy to make. Because of course, I will be making them all the time! So here is the closest, easiest match I could come up with, easy garlic mashed potatoes. I normally will double the recipe to make extras (mainly because me and hubby to be can’t control ourselves) but you can always put them in smaller containers and freeze for easy reheating. Enjoy! And don’t come blame me for being a carb coma, I can not be held responsible :p
Ingredients:
- 1½ pounds red potatoes (about 8 small), quartered, skin left on
- 2 teaspoons salt, divided
- ¼ teaspoon fresh ground black pepper
- 1½ teaspoon garlic powder
- ¾ cup sour cream
- ½ cup grated Parmesan cheese
- ¼ cup I Can’t Believe it’s Not Butter (I prefer the Olive Oil version…you can use regular unsalted butter if you like as well)
- Place quartered potatoes in a large pot. Add water to cover the potatoes. Stir in 1 teaspoon of the kosher salt. Bring to a boil, then reduce heat, cover and simmer about 20 to 25 minutes.
- Meanwhile, place the remaining 1 teaspoon kosher salt, pepper, garlic powder, sour cream, parmesan cheese and butter in the bowl of an electric mixer.
- When potatoes pierce easily with a paring knife, remove from heat and drain. Add potatoes to the bowl with the other ingredients and mix on medium speed until mostly smooth, some lumps are okay 🙂 Serve.
So ingredient wise, as you can see I’m a Kroger fan. I prefer to save a little money on the essentials of the house. Since we go threw them a lot. But you can change brands and even use regular butter if you prefer over the I can’t believe it’s not butter.
Serve with your favorite main dish and a side of some greens. I like to have mine as a side of my Mama’s Easy Green beans with Ham. But the nice thing about these addicting potatoes are….you can have them with anything!
